Amazon.com Product Description
An excellent addition to any baker's kitchen, this set of two 18-by-13-by-1-inch pans offers a smooth flat surface for baking large batches of anything from chocolate chip cookies or thin cakes for rolling to roasted root vegetables, buttermilk biscuits, or homemade pizzas. Having two on hand helps save time: the first batch can start baking in the oven while the second pan gets loaded with evenly spaced balls of cookie dough or crescent-shaped croissants. The versatile pans can also be placed underneath cookware in the oven to catch drips or spills. The shallow sides of the pan ensure a tidy oven as well--melting cheese and loose nuts stay neatly contained.
Crafted from corrosion-resistant heavy-weight aluminized steel, the commercial-quality pans won't buckle or bend under intense heat and consistently provide fast and even heat distribution. Foods brown quickly and evenly--there's no need to turn the pans midway through baking. Bakers new to aluminized steel should pay extra attention at first, since the heavy-gauge pans bake more quickly than lighter-gauge varieties. The pans gradually darken with use, which actually improves heat retention, but it may also require that oven temperatures are lowered by 25 degrees to ensure even browning. The traditional uncoated surface of the pans makes them extra rugged and a great conductor of heat, but butter, oil, or parchment paper should be used to prevent foods from sticking. A 25-year limited warranty covers the set.

High quality at a fair price
The dimensions of this cookie/jelly roll pan are 18" x 13" x 1." Note that these pans are the non-coated variety. They are sturdy and live up to the Chicago Metallic name. One of the two I received has a small dent in it, and I have had this happen on one other occasion with Chicago Metallic Commercial pans that came in a set of two. I decided to keep the dented pan and it has not caused any difficulties in using it to bake cookies or roast vegetables or meats.
Treat yourself to the real thing
After using typical cookie sheets for most of my adult life, I finally got fed up and decided to pay for good ones. What a difference! Can a normal person get pleasure out of a cookie pan? Well, you can if you appreciate quality--especially if you have always done without it before. Anyway--I am ENJOYING these pans. They are hefty--no resounding "pop" after a few minutes in the oven. They fit in my dishwasher--which is a real plus. I expect to enjoy them for many years to come.
Solution to Label Glue
These pans are mahvelous, dahling. Having said that, I've read lots of reviews that included complaints about the strength of the adhesive used to stick the labels on the pans. To one, to all: There is a product called "GOO GONE" that is designed for just this type of thing. You can find it almost anywhere, hardware stores, grocery stores, etc. It works in minutes, and leaves no trace of the adhesive behind. Just be sure the wash the pan afterwards. Happy adhesive-free baking!
